Two Valves or Four?

I'm pretty set on getting a Ducati ST in the next few weeks. As I look across the ads, I'm seeing that the ST4's aren't that much more than the ST2's. Newer and more HP is always nice but I've heard that the ST2 has more low-end torque which makes for better touring and 2-up riding. True? Are two valves less expensive to maintain than four?

Also, wrecked knees call for as much leg room as possible. Are there any peg lowering kits or taller seats available if the stock setup proves too tight?
