Back in the saddle, advice needed!

Need some suggestions on what bike to get.
I'm 28 and I've been riding street bikes since I was 16 (dirt bikes since I was 12). My last two bikes were am '02 VFR and a '99 ZX-6R. Last summer I sold my VFR.
I'm 5'8 with a 31 inch inseam. Mainly I use a bike for fun on weekends, the occasional commute and I'll take 2 or 3 long trips per year (re: cross country... like 2000+ miles round trip each time). Both the VFR and ZX-6R worked for this (albeit the VFR better).
I want something with more guts, handling, and breaking then the VFR, but at least as comfy for the long trips. I've been thinking about a GSXR750 and then moding the seat, bars and pegs for touring. I like the ZX14 and 'Busa but I think those might be a little pricey both on the purchase and insurance end of things. Thought about a duc ST but the maintenance and lack of dealer network worries me. Don't like the new Triumph ST.. and not sure I even want an ST, I'm really looking more for a sport bike that will be suitable for major trips. Suggestions?
